Amberjack charters by country

The greater amberjack turns up in warm and temperate seas almost everywhere, hunting baitfish and squid around structure. Hooked, it heads for the bottom and tries to rub the line on the rock or steel it came from, which is why Florida anglers call it the reef donkey. Most amberjack fishing is vertical, a metal jig worked fast under the boat or a live bait dropped to fish on the sounder. Where our boats find them:

On most of these boats amberjack are one fish in a mixed day. If they are why you are booking, say so: the crew will spend time over deep structure instead of trolling past it, and rig the heavy jigging rods, because a big amberjack on light gear next to a wreck rarely ends with a photo.

Questions and answers

Short answers to what people ask before they book. Anything else, ask the captain in chat.

Which of these charters are built around amberjack?

The Las Palmas reef trip on Gran Canaria is written around amberjack and snapper. Sport Fishing South Florida vertical jigs the Palm Beach wrecks and reefs, and the Malta boats jig the deep reefs. On the Honolulu shared trip and at Rivière Noire amberjack are a by-catch of other fishing.

Why do so many amberjack get away?

Because they fight downwards. The first run goes straight for the wreck or rock the fish was feeding over, and if it gets there the line is cut. Crews use heavy jigging tackle, a firm drag and fast winding in the first seconds to turn its head from the bottom.

Are amberjack good to eat?

Yes, the flesh is firm and white, and smaller fish are generally the better eating. In some tropical waters large reef predators, amberjack among them, can carry ciguatera, so follow the crew's advice on which fish to keep and which to release.
